Ingredients
  

For the Dough
  • 2 teaspoons Active Dry Yeast Ensure it's fresh and active.
  • 1 cup Warm Water Around 110°F (43°C).
  • 2 teaspoons Sugar Can substitute with honey.
  • 3 cups All-Purpose Flour Use suitable gluten-free flour blend if needed.
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil Other oils can be substituted.
For the Topping
  • 1 cup Ricotta Cheese A blend with cottage cheese can be used.
  • 1 cup Mozzarella Cheese Fresh mozzarella is recommended.
  • ½ cup Parmesan Cheese Nutritional yeast can be used for vegan option.
  • 1 tablespoon Lemon Zest Bottled lemon juice can be used in a pinch.
  • ½ cup Lemon Juice Fresh juice for best taste.
  • 1 tablespoon Fresh Thyme Other herbs can be used.
  • 1 tablespoon Honey Maple syrup may be used for vegan option.
  • to taste Red Pepper Flakes Optional for heat.

Method
 

Dough Preparation
  1. In a small bowl, combine warm water with sugar and active dry yeast. Stir gently and let it sit for about 5 minutes until frothy.
  2. In a large bowl, whisk together the flour and salt until combined.
  3. Pour the yeast mixture and olive oil into the dry ingredients. Mix until the dough comes together.
  4. Transfer the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Place kneaded dough into a lightly oiled bowl. Cover and let it rise in a warm area for 1 to 1.5 hours until doubled in size.
Cheese Mixture and Assembly
  1. While dough is rising, mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl until smooth.
  2. Preheat the oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
  3. Punch down the risen dough and roll it out into a 12-inch round on a floured surface.
  4. Transfer the dough to a parchment-lined baking sheet or hot pizza stone. Spread the cheese mixture over the dough.
  5. Sprinkle chopped thyme over the cheese mixture.
  6. Bake for 10-12 minutes until crust is golden and cheese is bubbly.
  7. Remove from oven, drizzle with olive oil and honey, and sprinkle red pepper flakes if desired.
  8. Allow to cool for a few minutes before slicing and serving.
