- Preheat your oven to 400°F (200°C). Scrub and dry the russet potatoes thoroughly. Poke several holes in each potato with a fork.
- Coat each potato generously with olive oil, then sprinkle salt, black pepper, garlic powder, and paprika over them.
- Place the seasoned potatoes directly on the oven rack and bake for 50–60 minutes until tender.
- While the potatoes are baking, season the sirloin steak bites with salt and pepper. Heat a skillet over medium-high heat with butter, and sear the steak bites for about 3-4 minutes on each side.
- Once baked, remove the potatoes from the oven and let cool slightly. Slice open each potato lengthwise and press the ends to fluff.
- Top each potato with the cooked steak bites, then add shredded cheddar cheese and return to the oven for 3-5 minutes until melted.
- Remove from the oven and garnish with chopped green onions before serving.
