- Preheat your oven to 425°F (220°C) and prepare a mini muffin tin with cooking spray or olive oil.
- Place two frozen tater tots in each muffin cup and bake for about 10 minutes.
- Once softened, press down the tater tots to form cup shapes and bake for an additional 15 minutes until golden brown.
- In a saucepan, heat olive oil and sauté onion for about 5 minutes until soft, then add minced garlic and cook for another minute.
- Add sweet smoked paprika, hot smoked paprika, and cayenne pepper; stir before adding tomato puree and roasted red peppers.
- Let the sauce simmer for about 10 minutes until thick.
- Blend the sauce until smooth; return it to the saucepan and stir in sugar, sherry vinegar, salt, and pepper.
- Remove the muffin tin, fill each cup with shredded manchego cheese, and bake for another 2-3 minutes until melted.
- Drizzle bravas sauce over the tots, add sour cream or aioli, garnish with bacon, parsley, chives, and smoked paprika before serving warm.
