  4. Drizzle vegetables with olive oil and lemon juice, sprinkle oregano, salt, and pepper over them, and toss gently.
  5. Pat cod fillets dry and season with salt, pepper, and lemon zest.
  6. Nestle the cod fillets over the vegetable mixture in the baking dish.
  7. Drizzle more olive oil and squeeze fresh lemon juice on top of the cod.
  8. Bake in the oven for about 20 minutes until fish is opaque and flakes easily.
