Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease your baking dish with olive oil.
  2. Slice zucchini and tomatoes, salt the zucchini if desired, and pat dry after 10 minutes.
  3. In a skillet, heat olive oil over medium heat, sauté onions and garlic until onions are translucent.
  4. Add cubed chicken to the skillet, cook for 5-7 minutes until browned, season with herbs and salt.
  5. Layer zucchini and tomato slices in the greased baking dish, then pour the chicken mixture on top.
  6. Sprinkle cheese over the top and bake for 35 minutes until chicken is cooked through and cheese is bubbly.
  7. (Optional) For a crispy finish, bake uncovered for an additional 5-10 minutes.
  8. Let the bake rest for 5 minutes before serving warm.
