Ingredients
  

For the Cheesecake Filling
  • 8 ounces Cream Cheese at room temperature
  • 1/2 cup Sugar
  • 1 teaspoon Vanilla Extract can substitute with almond extract
  • 1/2 cup Sour Cream can use Greek yogurt
  • 2 large Eggs add one at a time
For the Crust
  • 1 cup Graham Crackers finely crushed
  • 1/4 cup Butter melted and unsalted
For the Topping
  • 1 cup Red & Green Sprinkles optional but festive

  • Mixing bowls
  • Handheld or stand mixer

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. In a large mixing bowl, blend cream cheese and sugar until smooth.
  3. Add vanilla extract and sour cream, and mix until combined.
  4. Incorporate eggs one at a time, mixing gently after each.
  5. In another bowl, combine graham cracker crumbs with melted butter.
  6. Press the crust mixture into the bottom of muffin liners.
  7. Pour cheesecake filling into each crust, filling about 3/4 full.
  8. Bake in preheated oven for approximately 20 minutes.
  9. Cool in the tin for 10-15 minutes, then refrigerate for at least 2 hours.
  10. Decorate with red and green sprinkles before serving.
