  • 1 1/2 cups Granulated Sugar brown sugar can be a lovely substitute
  • 3 large Eggs
  • 1 cup Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • 2 cups Grated Carrots
  • 1 cup Crushed Pineapple fresh pineapple is a delightful alternative
  • 1/2 cup Chopped Walnuts optional
For the Frosting
  • 8 oz Cream Cheese softened
  • 1/2 cup Unsalted Butter softened
  • 3 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
For Garnishing
  • 1 cup Pineapple Chunks optional
  • 1/2 cup Shredded Carrots optional
