Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease the muffin tin with butter.
  2. Roll out the pie crusts and cut out circles to fit in the muffin cups. Freeze for 10 minutes.
  3. Whisk together eggs, whole milk, heavy cream, salt, pepper, and cayenne in a mixing bowl.
  4. Blend in spinach, onion, and ham into the egg mixture.
  5. Fill each muffin cup with the egg mixture, leaving about 1/4 inch space at the top.
  6. Bake for 25 to 30 minutes until set and lightly browned.
  7. Let cool for 10 minutes before removing the quiches from the tin and serve warm.
