  • 1 cup bell peppers diced
  • 1 cup onion diced
  • 1 cup uncooked rice
  • 2 cups chicken broth or water
  • 2 tbsp taco seasoning or spices of choice

  • 1/2 cup cilantro freshly chopped
  • 1 avocado sliced

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and coat a large oven-safe skillet with olive oil.
  2. Sauté bite-sized chicken chunks in the skillet with salt, pepper, and spices for 5-7 minutes until golden brown.
  3. Add diced bell peppers and onions, cooking for an additional 3-4 minutes until softened.
  4. Stir in uncooked rice and pour in chicken broth or water to the skillet, mixing well.
  5. Add taco seasoning and stir well, cover with a lid, and bake for 20-25 minutes until rice is tender.
  6. Fluff the rice with a fork, allow to cool slightly, then top with cilantro, avocado, and other garnishes.
