  • 1 pound Boneless Skinless Chicken Breast
  • 2 tablespoons Olive Oil or vegetable oil
  • 1 medium Yellow Onion or red onion
  • 1.5 cups Extra-Long Grain Rice or brown rice
  • 1 can Diced Tomatoes or fresh tomatoes
  • 1 can Black Beans canned or prepared dried beans
For Seasoning
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder omit if using fresh onion
  • 2 teaspoons Chili Powder adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 2 cups Low-Sodium Chicken Broth or vegetable broth
For the Final Touches
  • 1 whole Lime for optional topping
  • 1 cup Cheese (Colby Jack, Monterey Jack, or Cheddar) optional
  • 1 cup Toppings fresh diced tomatoes, green onions, sour cream, guacamole

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped yellow onions until translucent, about 3-4 minutes.
  2. Season boneless chicken breasts with salt and pepper and brown them on all sides for 5-6 minutes. Move chicken to one side.
  3. Add another tablespoon of olive oil and toast the extra-long grain rice for about 2 minutes until light golden.
  4. Stir in black beans, diced tomatoes, and chicken broth. Add garlic powder, onion powder, chili powder, cumin, and smoked paprika. Bring to simmer.
  5. Cover and cook on low heat for 20 minutes until rice is fluffy and chicken is cooked through.
  6. Remove from heat, squeeze lime juice, add cheese, and cover for 2-3 more minutes to melt.
  7. Stir to combine and serve hot with desired toppings.
