Step‑by‑Step Instructions
  1. In a small bowl, combine minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper. Mix until smooth and well-combined.
  2. In a large pot, begin layering your ingredients starting with Spam, sliced sausage, and diced tofu at the bottom.
  3. Add in the rice cakes and sliced onions, followed by enoki mushrooms and kimchi.
  4. Pour your prepared sauce over layered ingredients, and add broth to submerge everything. Bring to a boil for 5-7 minutes.
  5. Gently stir in the ramen noodles and cheese, cover, reduce heat to a simmer, and cook for another 3-5 minutes.
  6. Remove from heat, let sit for a minute, then sprinkle with chopped green onions before serving.
