Step-by-Step Instructions
  1. In a large deep skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced andouille sausage and sauté for about 5–7 minutes until browned and crispy on both sides.
  2. Add 1 diced onion to the skillet and stir for about 3–4 minutes until softened. Next, incorporate 3 minced garlic cloves, cooking for an additional 30 seconds.
  3. Pour in 8 ounces of uncooked penne pasta along with 4 cups of chicken broth, 1 cup heavy cream, and 1 can of diced tomatoes. Add 2 teaspoons of Cajun seasoning, and salt and black pepper to taste.
  4. Bring the mixture to a gentle simmer, cover loosely, and cook for 12–15 minutes, stirring occasionally to prevent sticking.
  5. Once the pasta is tender, reduce the heat to low and stir in 1 cup of grated Parmesan cheese until fully melted.
  6. Remove from heat and sprinkle with freshly chopped parsley. Serve warm straight from the skillet.
