- Preheat your oven to 400°F (200°C).
- In a mixing bowl, crumble the feta cheese and combine it with your choice of herbs, salt, and pepper. Mash until well-incorporated.
- Unroll the phyllo dough, keeping it covered. Brush one sheet lightly with olive oil.
- Place a spoonful of the feta mixture along one edge of the phyllo sheet, fold in the sides, and roll tightly.
- Line a baking sheet with parchment paper and arrange the rolls on it. Brush tops with olive oil.
