For the Cod
  • 2 fillets Cod fresh or frozen
  • 1 tablespoon Olive oil for sautéing
  • 1 tablespoon Butter
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
For the Sauce
  • 2 cloves Garlic minced
  • 1/2 cup Heavy cream can substitute with lighter alternative
  • 1 teaspoon Dijon mustard optional
For the Spinach
  • 4 cups Baby spinach can substitute with other greens
  • 1 tablespoon Olive oil for sautéing

Method
 

Steps
  1. Pat the cod fillets dry and season with salt and pepper. Set aside.
  2. Heat a skillet over medium-high heat with olive oil and butter. Sear cod for 3-4 minutes until golden, then flip and cook for another 3-4 minutes.
  3. In the same skillet, add minced garlic and sauté for 30 seconds. Add heavy cream and Dijon mustard; simmer for 2-3 minutes until thickened.
  4. In another pan, heat olive oil and sauté spinach for 2-3 minutes until wilted.
  5. Plate the sautéed spinach and top with the cod, then drizzle garlic cream sauce over the top.
