Steps
- Pat the cod fillets dry and season with salt and pepper. Set aside.
- Heat a skillet over medium-high heat with olive oil and butter. Sear cod for 3-4 minutes until golden, then flip and cook for another 3-4 minutes.
- In the same skillet, add minced garlic and sauté for 30 seconds. Add heavy cream and Dijon mustard; simmer for 2-3 minutes until thickened.
- In another pan, heat olive oil and sauté spinach for 2-3 minutes until wilted.
- Plate the sautéed spinach and top with the cod, then drizzle garlic cream sauce over the top.
