Ingredients
  

For the Pasta
  • 300 grams Pasta Traditional choices include tagliatelle or fettuccine.
For the Sauce
  • 500 grams Ground Meat Ground beef and pork mix is ideal; lentils or mushrooms for vegetarian.
  • 2 tablespoons Olive Oil Can be replaced with vegetable oil.
  • 1 medium Onion Finely chopped.
  • 1 medium Carrot Diced.
  • 1 medium Celery Diced.
  • 2 cloves Garlic Minced.
  • 100 ml Dry White Wine Can substitute with broth or vinegar mixed with water.
  • 400 grams Canned Crushed Tomatoes
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 100 ml Milk or Heavy Cream Use skim milk or unsweetened almond milk for lighter.
  • to taste Salt
  • to taste Freshly Ground Black Pepper

Method
 

Cooking Steps
  1. Boil a large pot of salted water. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and reserve a little pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add onion, carrot, and celery; sauté for 5-7 minutes until softened and fragrant.
  3. Add minced garlic to the skillet and cook for 1 minute. Make sure not to brown it.
  4. Increase heat to medium-high, add ground meat and cook, breaking it apart until browned, about 5-7 minutes.
  5. Pour in dry white wine and simmer for 2-3 minutes, deglazing the skillet.
  6. Stir in canned crushed tomatoes, tomato paste, oregano, and basil. Reduce heat to low and let it simmer for 10 minutes.
  7. Add milk or heavy cream and simmer for 20-30 minutes, stirring occasionally until thickened.
  8. Season with salt and pepper to taste.
  9. Toss cooked pasta in the sauce or serve sauce over pasta. Add reserved pasta water if too thick.
  10. Serve and garnish with chopped parsley and Parmesan cheese.

Notes
