Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a mixing bowl, combine cream cheese, granulated sugar, egg yolk, and vanilla extract. Blend until smooth.
  3. In a large bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar, then mix in eggs, honey, and vanilla.
  4. Alternate adding the flour mixture and milk to the creamed mixture. Fold in diced peaches.
  5. Fill cupcake liners halfway with batter, add cream cheese filling, then top with more batter.
  6. Bake for 18-22 minutes until golden brown and a toothpick comes out clean. Cool in the pan for 5 minutes.
  7. Decorate with peach slices, honey drizzle, and crushed graham crackers.

Notes
