Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish with vegan butter or coconut oil.
  2. In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
  3. Add milk, maple syrup, chia or flax egg, melted vegan butter or coconut oil, and vanilla extract. Mix until smooth.
  4. Pour the mixture into your prepared baking dish and spread it evenly.
  5. Melt a tablespoon of vegan butter and a splash of maple syrup in a small saucepan. Stir in the pecans until well coated.
  6. Sprinkle the pecan topping over the oatmeal mixture, then bake for 35-40 minutes until golden brown.
  7. Let it cool for about 5 minutes before serving warm, optionally drizzled with more maple syrup or your favorite milk.
