Preparation Steps
- Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish with vegan butter or coconut oil.
- In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
- Add milk, maple syrup, chia or flax egg, melted vegan butter or coconut oil, and vanilla extract. Mix until smooth.
- Pour the mixture into your prepared baking dish and spread it evenly.
- Melt a tablespoon of vegan butter and a splash of maple syrup in a small saucepan. Stir in the pecans until well coated.
- Sprinkle the pecan topping over the oatmeal mixture, then bake for 35-40 minutes until golden brown.
- Let it cool for about 5 minutes before serving warm, optionally drizzled with more maple syrup or your favorite milk.
