- Brown the sausage in a large skillet over medium heat for 5-7 minutes until golden brown, then drain excess grease.
- Cook the bacon in the same skillet over medium heat for 6-8 minutes until crispy; reserve half for topping.
- Preheat the oven to 350°F (175°C) and layer the shredded potatoes in a greased baking dish, followed by the sausage and cheese.
- In a bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper, then pour over the layered ingredients.
