  • 1 lb Breakfast Sausage Can substitute with turkey sausage
  • 4 oz Bacon Reserve half for topping
  • 20 oz Shredded Potatoes Thawed and drained
  • 6 Eggs Large
  • 2 cups Milk Can substitute with almond or oat milk
  • 2 tbsp Dijon Mustard
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 cups Cheddar Cheese Can mix with Monterey Jack
  • 1/4 cup Green Onions Can substitute with chives

Method
 

Preparation Steps
  1. Brown the sausage in a large skillet over medium heat for 5-7 minutes until golden brown, then drain excess grease.
  2. Cook the bacon in the same skillet over medium heat for 6-8 minutes until crispy; reserve half for topping.
  3. Preheat the oven to 350°F (175°C) and layer the shredded potatoes in a greased baking dish, followed by the sausage and cheese.
  4. In a bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper, then pour over the layered ingredients.
  5. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Remove from the refrigerator, let sit at room temperature for 30 minutes, then bake uncovered for 45-55 minutes.
  7. Let cool for 5-10 minutes, garnish with reserved bacon and green onions, then serve warm.
