Ingredients
  

Burrito Filling
  • 1 lb Lean Ground Meat Turkey, chicken, or beef can be used.
  • 4 large Eggs
  • 1 cup Egg Whites
  • 1 cup Cottage Cheese Ricotta cheese can be used as a substitute.
  • 1 cup Bell Peppers Fresh or frozen.
  • 1 medium Onions
  • 1 cup Yellow Potatoes Sweet potatoes can be used as a substitute.
  • 1 cup Cheddar Cheese Any melty cheese can be used.
For Roasting
  • 2 tbsp Olive Oil Avocado oil is a suitable substitute.
  • to taste Salt
  • to taste Pepper
For Wrapping
  • 10 large Tortillas Gluten-free options are available.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. On the baking sheet, toss diced bell peppers, onions, and diced yellow potatoes with olive oil, salt, and pepper. Spread them out evenly and roast for about 30 minutes, or until tender and slightly browned, stirring halfway through.
  3. Layer the lean ground meat over the roasted veggies on the baking sheet. Season the mixture and roast for another 15 minutes, or until thoroughly cooked and browned.
  4. In a blender, combine eggs, egg whites, and cottage cheese, blending until smooth and creamy.
  5. Pour the egg mixture over the roasted veggies and meat on the baking sheet. Sprinkle cheddar cheese on top and bake for an additional 10 to 15 minutes, or until the eggs are completely set and cheese is melted.
  6. Allow the baked filling to cool slightly before slicing into 10 equal portions. Prepare your tortillas.
  7. Wrap each burrito tightly in parchment paper and label them before freezing for later use.
