Step-by-Step Instructions
  1. In a large mixing bowl, combine the cottage cheese, olive oil, and egg. Blend until smooth and creamy, about 2-3 minutes.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  3. Gradually add the dry mixture to the wet ingredients, stirring gently to combine, being careful not to overwork the dough.
  4. Gently fold in the finely chopped baby spinach and shredded mozzarella until evenly distributed.
  5. Lightly flour your hands and shape the dough into flagels, making a hole in the center.
  6. Preheat your oven to 400°F (200°C), then bake the flagels on a parchment-lined baking sheet for about 15 minutes.
  7. After baking, let the flagels cool on a wire rack for about 5 minutes before serving.
