  • 1 bunch Fresh Parsley Key herb for flavor
  • 1/2 bunch Fresh Cilantro Optional, can increase parsley
  • 3 cloves Garlic Fresh, or roasted for sweetness
  • 1/2 cup Olive Oil Can substitute with avocado oil
  • 1/4 cup Red Wine Vinegar Can use white wine vinegar
  • 1 teaspoon Dried Oregano Fresh is a good substitute
  • 1/2 teaspoon Red Pepper Flakes Adjust to taste
  • 1 teaspoon Salt Adjust to preference
  • 1/2 teaspoon Black Pepper Adjust to preference
  • 2 tablespoons Fresh Lemon Juice Adds brightness

Method
 

Preparation Steps
  1. Rinse the fresh parsley and cilantro under cool water, pat dry, and remove thick stems.
  2. In a food processor, add chopped parsley, cilantro, garlic, oregano, red pepper flakes, salt, and pepper. Pulse for 10-15 seconds.
  3. With the processor running, slowly drizzle in olive oil, followed by vinegar and lemon juice. Pulse until combined but slightly chunky.
  4. Taste and adjust seasoning with more vinegar, salt, or red pepper flakes if desired.
  5. Transfer to a container and let it sit for 10 minutes before serving or refrigerate for up to a week.
