- Start by washing the zucchinis thoroughly and slicing them into thin ribbons; peel and thinly slice the onion.
- Heat a wok or large skillet over high heat for about 2 minutes, add a splash of oil.
- Once the oil is hot, add the sliced onions and sauté for 2–3 minutes until golden brown.
- Toss the zucchini ribbons into the skillet with the onions, stir-fry for 2–3 minutes.
- Pour a splash of soy sauce over the vegetables, stir and cook for another minute.
- Transfer to a serving dish and sprinkle with toasted sesame seeds if desired.
