- Preheat your oven to 425°F (220°C).
- Carefully slice the small sugar or pie pumpkin in half and scoop out the seeds.
- Drizzle olive oil over the cut sides of the pumpkin and sprinkle with salt and pepper.
- Place the seasoned pumpkin halves cut side down on a lined baking tray and roast for approximately 45 minutes.
- Flip the pumpkin halves so that the cut side is facing up and nestle portions of Burrata cheese into the center.
- Return the pumpkin halves to the oven and roast for an additional 5-8 minutes until the Burrata is melty.
- Take the dish out of the oven, let it cool briefly, and serve warm, optionally garnished with fresh herbs.
