Step‑By‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine onion powder, garlic powder, smoked paprika, fresh thyme, rosemary, salt, and pepper. Rub this seasoning over the chicken thighs.
  3. Heat a large, oven-safe skillet over medium-high heat and add olive oil. Sear the chicken thighs skin-side down for 5-7 minutes until golden and crispy.
  4. Flip the thighs and add sliced red onions and Honeycrisp apples around the chicken in the skillet.
  5. In a bowl, whisk together apple cider, chicken broth, Dijon mustard, and minced garlic. Pour this mixture into the skillet around the chicken.
  6. Transfer the skillet to the oven and roast for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove the skillet from the oven, transfer the chicken to a plate, and cover to keep warm. Let the sauce simmer for 5 minutes until slightly thickened.
  8. Serve the chicken with the thickened sauce, apples, and onions. Enjoy with crusty bread or mashed potatoes.
