- In a mixing bowl, combine cooked ground beef, sliced beef pepperoni, shredded mozzarella cheese, pizza sauce, and Italian seasoning. Stir until well mixed.
- Place a large skillet over medium heat and add a tablespoon of olive oil. Allow the oil to heat until shimmering, about 1 to 2 minutes.
- Lay one tortilla flat in the skillet, and spread half of the beef and pepperoni filling evenly across its surface. Place a second tortilla on top and gently press down.
