Preparation Steps
  1. Peel and cube the sweet potatoes into bite-sized pieces, about 1-inch thick. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the sausage and cook for about 5-7 minutes, stirring occasionally until golden-brown.
  4. Stir in the cubed sweet potatoes with the sausage and cook for another 5 minutes.
  5. In a small bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and pepper.
  6. Pour the sauce over the mixture in the skillet, reduce heat to low, cover, and simmer for about 10 minutes.
  7. Uncover, stir gently, and garnish with fresh parsley before serving.
