  • 2 cups Zucchini Sliced into half-moons
  • 2 cups Mushrooms Diced
  • 1 cup Onion Sliced
  • 2 cloves Garlic Mince for best flavor
For Cooking
  • 2 tablespoons Olive Oil Can substitute with avocado oil or butter
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
  • 1 teaspoon Thyme Optional, can substitute with oregano

Cooking Instructions
  1. Wash and slice zucchini into half-moons about 1/4 inch thick. Dice mushrooms and slice onions into ribbons. Mince garlic.
  2. Heat olive oil in a large skillet over medium heat for about 1 minute until shimmering.
  3. Add onions to the skillet and sauté for about 3 minutes until soft and translucent.
  4. Stir in minced garlic and diced mushrooms, and sauté for 3 to 4 minutes until mushrooms are tender.
  5. Incorporate zucchini and add salt, black pepper, and thyme. Sauté for an additional 3 to 5 minutes until zucchini is tender.
  6. Taste and adjust seasoning as needed before serving.
  7. Transfer to a serving dish, garnish with parsley, and serve warm.
