- Wash and slice zucchini into half-moons about 1/4 inch thick. Dice mushrooms and slice onions into ribbons. Mince garlic.

- Stir in minced garlic and diced mushrooms, and sauté for 3 to 4 minutes until mushrooms are tender.
- Incorporate zucchini and add salt, black pepper, and thyme. Sauté for an additional 3 to 5 minutes until zucchini is tender.
- Taste and adjust seasoning as needed before serving.
- Transfer to a serving dish, garnish with parsley, and serve warm.
