Cooking Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cubed potatoes, onion wedges, and minced garlic. Drizzle with olive oil and sprinkle in paprika, rosemary, thyme, salt, and pepper. Toss until evenly coated.
  3. Slice the Italian sausage into bite-sized pieces and add to the potato mixture. Mix gently to distribute the sausage evenly.
  4. Transfer the mixture to the prepared baking sheet and spread in a single layer to avoid overcrowding.
  5. Roast in the oven for 30-40 minutes, stirring halfway through, until potatoes are golden and tender, and sausage is browned.
  6. Remove from the oven and let cool for a minute. Garnish with fresh parsley before serving.
