Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare sweet potatoes by peeling and dicing them.
  2. Toss diced sweet potatoes with olive oil, paprika, garlic powder, ground cinnamon, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 40-45 minutes, stirring halfway.
Cooking
  1. While sweet potatoes roast, heat olive oil in a skillet and sauté diced yellow onion for 3-4 minutes until softened.
  2. Add lean ground beef, breaking it apart, and season with taco seasoning, salt, and pepper. Cook for 6-8 minutes until browned.
Assembly
  1. Assemble your bowl with roasted sweet potatoes as the base, topped with ground beef, avocado slices, and cottage cheese.
  2. Drizzle with hot honey and garnish with fresh cilantro, red pepper flakes, or lime juice if desired.
