  • 2 cups White Vinegar Divided into two cups
For the Spice Blend
  • 2 whole Cardamom Pods No direct substitute
  • 2 tablespoons Kosher or Canning Salt Enhances flavor
  • 2 tablespoons Brown Sugar Or Maple Syrup, interchangeable with coconut sugar
  • 1 tablespoon Crushed Red Pepper Flakes Adjust to taste
  • 1 tablespoon Dry Mustard Prepared mustard can substitute
  • 1 teaspoon Whole Cloves No direct substitute
  • 1 teaspoon Black Peppercorns Ground pepper can replace
  • ½ teaspoon Ground Cinnamon Allspice can substitute

Method
 

Step-by-Step Instructions
  1. Soak raisins in boiling water for 15 minutes.
  2. In a food processor, blend softened raisins, molasses, tamarind paste, anchovies, onion, ginger, garlic, and 1 cup of white vinegar until smooth.
  3. Transfer the blended mixture to a saucepan, add another cup of white vinegar and spice blend. Stir and bring to boil.
  4. Cool slightly, transfer to a canning jar with a plastic lid, and store in a cool dark place for at least 1 month.
  5. Strain the sauce into another jar, separating solids from liquid.
