Preparation Steps
- In a small bowl, whisk together 1 tablespoon of cornstarch with 1 tablespoon of low-sodium soy sauce until fully dissolved. Mix in the other sauce ingredients and set aside.
- Bring a pot of water to a boil and cook ramen noodles according to package directions, slightly undercooking for a firmer bite. Toss with 1 tablespoon of sesame oil.
- In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Sauté sliced yellow onions for about 3 minutes until tender.
- Add minced garlic and sauté for 30 seconds. Then, add ground pork, browning for about 30 seconds before mixing everything together.
- Stir in diced red bell pepper and coleslaw mix, cooking for about 2-3 minutes until veggies soften slightly.
- Add cooked ramen noodles and sauce mixture, tossing everything well. Cook for another 2-4 minutes until heated through and sauce thickens slightly.
- Taste and adjust seasoning, adding more soy sauce or red pepper flakes if desired. Garnish with sliced green onions and serve hot.
