  • 1 teaspoon red pepper flakes adjust according to spice tolerance

  • 1 medium yellow onion can substitute with red onion
  • 2 cloves garlic or use roasted garlic

  • 1 medium red bell pepper can substitute with any color bell pepper
  • 4 cups coleslaw mix or freshly shredded cabbage
  • 2 stalks green onions for garnish, can substitute with chives

Method
 

Preparation Steps
  1. In a small bowl, whisk together 1 tablespoon of cornstarch with 1 tablespoon of low-sodium soy sauce until fully dissolved. Mix in the other sauce ingredients and set aside.
  2. Bring a pot of water to a boil and cook ramen noodles according to package directions, slightly undercooking for a firmer bite. Toss with 1 tablespoon of sesame oil.
  3. In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Sauté sliced yellow onions for about 3 minutes until tender.
  4. Add minced garlic and sauté for 30 seconds. Then, add ground pork, browning for about 30 seconds before mixing everything together.
  5. Stir in diced red bell pepper and coleslaw mix, cooking for about 2-3 minutes until veggies soften slightly.
  6. Add cooked ramen noodles and sauce mixture, tossing everything well. Cook for another 2-4 minutes until heated through and sauce thickens slightly.
  7. Taste and adjust seasoning, adding more soy sauce or red pepper flakes if desired. Garnish with sliced green onions and serve hot.
