Method
 

Cooking Instructions
  1. Whisk together hoisin sauce, soy sauce, rice wine vinegar, and sesame oil in a medium bowl until smooth.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add ground chicken and cook for about 5 minutes, until browned.
  3. In the same skillet, add a bit more oil and toss in small-diced carrots. Sauté for about 3 minutes until they start to soften.
  4. Add shiitake mushrooms and continue cooking for an additional 2 minutes.
  5. Stir in minced ginger, minced garlic, and the white parts of scallions. Sauté for 1-2 minutes until fragrant.
  6. Pour in the prepared sauce and water to achieve desired consistency. Stir well and simmer for about 2 minutes.
  7. Spoon the filling into washed Bibb lettuce leaves and garnish with green parts of scallions.
