- Heat vegetable oil in a large skillet over medium-high heat. Add ground chicken and cook for about 5 minutes, until browned.
- In the same skillet, add a bit more oil and toss in small-diced carrots. Sauté for about 3 minutes until they start to soften.
- Add shiitake mushrooms and continue cooking for an additional 2 minutes.
- Stir in minced ginger, minced garlic, and the white parts of scallions. Sauté for 1-2 minutes until fragrant.
- Pour in the prepared sauce and water to achieve desired consistency. Stir well and simmer for about 2 minutes.
- Spoon the filling into washed Bibb lettuce leaves and garnish with green parts of scallions.
