  • 8 ounces Flat Rice Noodles
For the Stir-Fry
  • 1 tablespoon Toasted Sesame Oil
  • 1 tablespoon Coconut Oil or vegetable/olive oil
  • 1 Medium Onion diced
  • 1 pound Boneless Skinless Chicken Breast sliced thinly
  • 3 cloves Garlic minced
  • 1 teaspoon Ground Ginger or fresh
  • 2 cups Thinly Sliced Green Cabbage
  • 1 cup Shredded Carrots
For the Sauce
  • 3 tablespoons Low-Sodium Soy Sauce
  • 1 tablespoon Fish Sauce
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon Honey or Agave Syrup to taste
For the Finish
  • 1 large Egg scrambled
  • to taste Sriracha for heat
  • 2 tablespoons Green Onions for garnish
  • 1/4 cup Chopped Roasted Peanuts reduced-salt options preferred

Method
 

Step-by-Step Instructions
  1. Prepare rice noodles by boiling water in a large pot, add flat rice noodles, and cook according to package instructions for 5-7 minutes. Drain and rinse with cold water.
  2. In a large skillet or wok, heat sesame oil and coconut oil over medium heat. Add diced onion and sauté for 3-4 minutes until soft.
  3. Add sliced chicken to the skillet, cooking for 5-7 minutes until no longer pink and slightly golden.
  4. Reduce heat and add minced garlic and ground ginger, sautéing for 1-2 minutes until fragrant.
  5. Incorporate sliced cabbage and shredded carrots, stir-frying for about 3 minutes until cabbage is wilted but still crunchy.
  6. Whisk together soy sauce, fish sauce, lime juice, and honey in a small bowl, then pour into the skillet, stirring to coat everything evenly.
  7. Fold in pre-cooked rice noodles, tossing gently for 2-3 minutes until well coated in sauce.
  8. Push noodles to one side and scramble the egg in the empty space for about 1 minute before mixing it into the noodles.
  9. Remove from heat, garnish with green onions and peanuts, and serve immediately.
