  • 1 can Canned Black Beans drained and rinsed
  • 1 cup Corn canned or frozen
  • 14.5 oz Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 2 cups Beef Broth can use vegetable broth for vegetarian option
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tbsp Chili Powder adjust to spice preference
  • 1 tsp Paprika consider smoked for depth
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste

Method
 

Step-by-Step Instructions
  1. In a large skillet over medium heat, add 1 lb of ground beef, cooking for about 6-8 minutes until fully browned. Drain excess grease.
  2. In your Crockpot, combine the browned beef with 1 can of black beans, 1 cup of corn, and a 14.5 oz can of diced tomatoes. Stir in 2 tbsp of tomato paste and 2 cups of beef broth along with chopped onion, minced garlic, and spices.
  3. Cover the Crockpot and cook on low for 6-8 hours or high for about 4 hours.
  4. Ladle the chili into bowls and top with shredded cheese, sour cream, and chopped green onions.
