  • 2 tablespoons Butter For browning chicken.

  • 1 cup Dry White Wine Drinkable variety like Sauvignon Blanc.
For the Stock and Herbs
  • 1 cup Chicken Stock
  • 1 bunch Thyme Sprigs Fresh.
  • 2 pieces Bay Leaves Remove before serving.
For Creaminess
  • 1/3 cup Sour Cream Or substitute with crème fraîche or heavy cream.
  • 2 tablespoons Grainy Mustard
Garnish
  • 2 tablespoons Fresh Parsley or Thyme Chopped.

Method
 

Step-by-Step Instructions
  1. Prep Chicken: Season chicken thighs with salt, pepper, Dijon mustard, and smoked paprika. Let marinate for 10 minutes.
  2. Brown Chicken: Heat butter and olive oil in a skillet, and cook chicken skin-side down until golden, about 5 minutes per side. Set aside.
  3. Sauté Shallots: In the same skillet, add shallots and sauté until tender, about 2 minutes.
  4. Deglaze: Pour in white wine and scrape bottom of the skillet. Simmer for 2 minutes.
  5. Simmer Chicken: Add chicken stock, thyme, and bay leaves. Return chicken to the skillet, cover, and simmer for 15-20 minutes.
  6. Finish Sauce: Remove chicken, whisk in sour cream and grainy mustard to remaining sauce. Adjust seasoning.
  7. Serve: Nestle chicken in sauce and warm through. Garnish with herbs before serving.
