Step-by-Step Instructions for Garlic Parmesan Chicken Meatloaf
  1. Begin by preheating your oven to 375°F (190°C). Lightly grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, add the diced onion and sauté for about 5 minutes until soft and translucent. Remove from heat and allow to cool slightly.
  3. In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix gently until well combined.
  4. Transfer the mixture into the greased baking dish and shape it into a loaf form, pressing gently but firmly.
  5. Sprinkle the remaining Parmesan cheese evenly over the top. Optionally, add a pinch of paprika or Italian seasoning.
  6. Place the baking dish in the preheated oven and bake for 45-50 minutes until the internal temperature reaches 165°F (74°C).
  7. Once baked, remove from oven and let it rest for 10 minutes before slicing and serving.

Notes

Avoid overmixing the meatloaf mixture to keep it tender. Letting the meatloaf rest allows the juices to redistribute, enhancing flavor and moisture.
