  • 3 cloves Garlic minced
  • 1 medium Onion finely minced
  • 1 cup Breadcrumbs gluten-free options available
  • 1 tsp Baking Soda
  • 1 cup Fresh Herbs (Parsley, Mint, Coriander) mixed based on preference
  • 2 tbsp Olive Oil extra virgin is best
  • 1 tsp Salt
  • 1 tsp Black Pepper
For the Roasted Potatoes
  • 4 medium Potatoes cut into wedges
  • 1 tsp Cumin
  • 1 tsp Paprika smoked paprika optional
  • 1 tsp Dried Oregano
For the Tzatziki Sauce
  • 1 cup Thick Greek Yogurt dairy-free option available
  • 1 medium Cucumber grated, excess moisture squeezed out
  • 2 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Dill or Mint fresh, based on preference
For the Salad Base
  • 2 cups Lettuce or salad mix
  • 1 cup Tomatoes chopped
  • 1 cup Cucumbers sliced
  • 1 medium Red Onion sliced
  • 1 cup Kalamata Olives

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper. Mix until fully incorporated and refrigerate for at least 2 hours.
  2. Preheat oven to 425°F (220°C) and roll mixture into balls. Bake for 30-40 minutes or until cooked through.
  3. Cut the potatoes into wedges, toss with olive oil, cumin, paprika, salt, and pepper. Roast in the oven until golden brown and crispy.
  4. Combine Greek yogurt, grated cucumber, garlic, lemon juice, and dill or mint for tzatziki. Chill until serving.
  5. Assemble your bowl with lettuce, roasted potatoes, meatballs, and tzatziki sauce.
