  3. Chop bell peppers, baby potatoes, and broccoli into similar-sized chunks.
  4. Toss baby potatoes and carrots with 1 tablespoon of olive oil on a prepared baking sheet.
  5. Roast the root veggies for 10 minutes until they start softening.
  6. In a medium bowl, whisk together honey, minced garlic, soy sauce, and remaining olive oil until smooth.
  7. Add the sausage, bell peppers, and broccoli, tossing to ensure even coating.
