- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper.
- Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet and roast for 15 minutes.
- Whisk together honey, low-sodium soy sauce, minced garlic, and apple cider vinegar in a saucepan.
- Bring the mixture to a gentle simmer for 3-5 minutes. Mix cornstarch with a bit of water, then stir into the saucepan until thickened.
- After 15 minutes, add sliced sausage and broccoli to the baking sheet, drizzle half of the sauce over everything, and toss to coat.
- Return to the oven and roast for another 15-20 minutes until sweet potatoes are fork-tender and broccoli is crisp-tender.
- Remove from oven, drizzle remaining sauce over the dish, and toss to combine before serving.
