  • 2 medium Sweet Potatoes chopped into 1-inch cubes
  • 2 cups Broccoli cut into bite-sized florets
Sauce
  • 3 tablespoons Olive Oil for tossing the sweet potatoes
  • 1/4 cup Honey can substitute with maple syrup
  • 1/4 cup Low-Sodium Soy Sauce use tamari for gluten-free
  • 3 cloves Garlic minced finely
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Cornstarch create a slurry with water to thicken

  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper.
  3. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet and roast for 15 minutes.
  4. Whisk together honey, low-sodium soy sauce, minced garlic, and apple cider vinegar in a saucepan.
  5. Bring the mixture to a gentle simmer for 3-5 minutes. Mix cornstarch with a bit of water, then stir into the saucepan until thickened.
  6. After 15 minutes, add sliced sausage and broccoli to the baking sheet, drizzle half of the sauce over everything, and toss to coat.
  7. Return to the oven and roast for another 15-20 minutes until sweet potatoes are fork-tender and broccoli is crisp-tender.
  8. Remove from oven, drizzle remaining sauce over the dish, and toss to combine before serving.
