- Prepare an ice bath with ice and water in a medium bowl.
- Bring a medium pot of water to a rolling boil. Gently lower eggs into boiling water with a slotted spoon.
- For medium soft-boiled eggs, cook for 7 minutes; for hard-boiled, cook for 10 minutes.
- Transfer eggs to the ice bath for 2 minutes to cool down. Peel eggs under running water.
- In a mixing bowl, mash the peeled eggs and add sugar, salt, pepper, mayonnaise, and milk. Mix well.
- Spread unsalted butter on one side of each slice of bread. Spread the egg salad on one slice.
- Top with the other slice, buttered side down, and press gently to form the sandwich.
- Trim the crusts for presentation and cut the sandwich in half diagonally. Serve immediately.
