  3. Stir in minced garlic and freshly grated ginger, cooking for an additional 1-2 minutes until fragrant. Add soy sauce and brown sugar.
  4. Add the sliced bell peppers and carrots to the skillet and sauté for 3-4 minutes until they soften but remain crunchy.
