Method
 

Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, finely chopped onion, breadcrumbs, egg, milk, salt, and pepper. Mix until well incorporated.
  3. Transfer the meatloaf mixture into a greased baking dish and bake for 20 minutes.
  4. While the meatloaf is baking, cook the macaroni according to package instructions until al dente. Drain and set aside.
  5. In a medium saucepan, melt the butter, stir in the flour, then gradually whisk in the milk until thickened. Add paprika, dry mustard, and 1 1/2 cups of shredded cheese, stirring until melted and smooth.
  6. Incorporate the drained macaroni into the cheese sauce, stirring gently to coat.
  7. Spread the macaroni and cheese mixture over the meatloaf in the baking dish. Optionally, sprinkle extra cheese on top.
  8. Return to the oven for an additional 25 minutes until golden and bubbling. Let rest for a few minutes before serving.
