Steps
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, finely chopped onion, breadcrumbs, egg, milk, salt, and pepper. Mix until well incorporated.
- Transfer the meatloaf mixture into a greased baking dish and bake for 20 minutes.
- While the meatloaf is baking, cook the macaroni according to package instructions until al dente. Drain and set aside.
- In a medium saucepan, melt the butter, stir in the flour, then gradually whisk in the milk until thickened. Add paprika, dry mustard, and 1 1/2 cups of shredded cheese, stirring until melted and smooth.
- Incorporate the drained macaroni into the cheese sauce, stirring gently to coat.
- Spread the macaroni and cheese mixture over the meatloaf in the baking dish. Optionally, sprinkle extra cheese on top.
- Return to the oven for an additional 25 minutes until golden and bubbling. Let rest for a few minutes before serving.
