  • 1 teaspoon Cinnamon
  • 1 teaspoon Turmeric

Step‑by‑Step Instructions
  1. Mix the spices in a small bowl; rub mixture over chicken thighs.
  2. Heat olive oil in a large pot; sear the chicken thighs skin-side down for 5 minutes.
  3. Sauté chopped onion until translucent; add garlic and tomato paste, cooking for an additional minute.
  4. Add chicken broth, diced tomatoes, and chicken thighs back to the pot; bring to a boil.
  5. Cover and simmer for 30 minutes until the chicken is tender.
  6. Add chopped preserved lemon and green olives; simmer uncovered for an additional 10 minutes.
  7. Remove cinnamon stick, adjust seasoning, and serve hot.
