  • 2 teaspoons Dried Thyme or 1 tablespoon fresh thyme
  • 3 cloves Garlic chopped
  • 1 tablespoon Oil for sautéing
  • 14 oz Mushrooms sliced, any variety
  • 1 tablespoon Balsamic Vinegar
  • to taste Salt and pepper
  • 1 1/4 cups Shredded Gruyere Cheese
Crust
  • 1 sheet Puff Pastry thawed
  • 1 Egg for brushing

Method
 

Preparation
  1. Slice the shallots and mushrooms into thin pieces; chop the garlic finely.
  2. In a medium skillet, melt the butter over medium heat. Add sliced shallots and thyme; sauté for 3-4 minutes.
  3. Increase heat and add mushrooms; cook for 5-7 minutes until browned. Add balsamic vinegar and let it evaporate.
  4. Combine sautéed mixture in a bowl, season with salt and pepper, and let cool slightly.
  5. Preheat oven to 375°F (190°C). Roll out puff pastry and score a border; poke holes in the base.
  6. Sprinkle Gruyere cheese over the pastry base, then layer with the mushroom mixture.
  7. Bake for 20-25 minutes until golden brown and cheese is bubbling.
  8. Allow to cool slightly before serving.
