- Preheat your oven to 375°F (190°C). Prepare a baking sheet lined with parchment paper.
- Melt 2 tablespoons of butter in a skillet over medium heat. Add shallots and thyme. Sauté for about 5 minutes until softened, then add garlic for 1 minute.
- In a separate skillet, heat 1 tablespoon of oil over high heat. Add sliced mushrooms and sauté for 5-7 minutes until golden. Add 2 tablespoons of balsamic vinegar and cook until evaporated.
- Roll out puff pastry on a floured surface to about ¼ inch thick. Score a 1-inch border and prick the center with a fork.
- Transfer puff pastry to the baking sheet. Layer with Gruyère cheese and spoon the cooled mushroom mixture evenly on top.
- Bake for 20-25 minutes until golden brown and puffed up.
- Allow to cool slightly, then cut into squares and serve warm.
