Ingredients
  

For the Chicken and Vegetables
  • 1 lb Chicken Breast Can be substituted with thighs
  • 1 cup Carrots Shredded
  • 1 medium Onion Yellow or white
  • 3 cloves Garlic Minced
  • 1 inch Ginger Freshly minced
  • 1 cup Pineapple Chunks or slices, drained
  • 3 stalks Scallions Greens only
For the Sauce
  • 1/4 cup Soy Sauce Low-sodium recommended
  • 1/4 cup Ketchup Or chili sauce for more kick
  • 2 tbsp Brown Sugar Honey or maple syrup can be used
  • 2 tbsp Cornstarch Dissolved in water
  • 1/2 cup Water
  • 1/2 cup Chicken Broth Low-sodium recommended
For the Base
  • 1 cup Rice Jasmine or white
  • 3 tbsp Vegetable/Canola Oil Olive oil can be substituted

Method
 

Cooking Steps
  1. Prep Ingredients: Cut chicken into bite-sized pieces, shred carrots, slice onions, and chop garlic and ginger.
  2. Cook Chicken: Heat oil in a skillet, season chicken with salt and pepper, sauté for 6-8 minutes until cooked through.
  3. Sauté Vegetables: Add onions, garlic, ginger, and carrots to the skillet, sauté for 4-5 minutes until softened.
  4. Add Pineapple and Chicken: Stir in pineapple and return chicken to skillet, mix well and cook for 2-3 minutes.
  5. Prepare Sauce: Whisk together reserved pineapple juice, soy sauce, ketchup, brown sugar, and cornstarch mixture, then pour over the skillet.
  6. Cook Rice: In another pot, combine rice, water, and broth, bring to a boil, then simmer for 15 minutes until tender.
  7. Serve: Plate rice, spoon chicken and pineapple mixture over rice, and garnish with chopped scallions.
