Preparation
  1. Prepare chicken by cutting the boneless, skinless chicken thighs into bite-sized pieces.

  3. Pour the marinade over the chicken, tossing to coat. Cover and refrigerate for at least 1 hour or overnight.
  4. Preheat the grill to medium-high heat (around 375°F or 190°C). Soak wooden skewers in water if using.
  5. Thread marinated chicken onto skewers, alternating with colorful vegetables if desired.
  6. Grill the skewers for 10–15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
