Preparation
- Prepare chicken by cutting the boneless, skinless chicken thighs into bite-sized pieces.
- In a mixing bowl, combine minced garlic, paprika, cumin, olive oil, lime juice, and soy sauce to create the marinade.
- Pour the marinade over the chicken, tossing to coat. Cover and refrigerate for at least 1 hour or overnight.
- Preheat the grill to medium-high heat (around 375°F or 190°C). Soak wooden skewers in water if using.
- Thread marinated chicken onto skewers, alternating with colorful vegetables if desired.
- Grill the skewers for 10–15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Remove from grill, let rest, and serve with optional marinade drizzle.
