- Finely chop the fresh salmon fillet or pulse in a food processor until chunky.
- In a large mixing bowl, combine salmon with parsley, cilantro, breadcrumbs, egg, garlic, paprika, lemon zest, salt, and pepper. Mix until well combined.
- Roll the mixture into balls about 2 inches in diameter, aiming for 12 to 14 balls.
- Heat olive oil in a skillet over medium heat. Cook salmon balls for 3 to 4 minutes on each side until golden brown.
- While salmon balls are grilling, blend avocado, cilantro, Greek yogurt, lime juice, and garlic until smooth. Adjust seasoning with salt and pepper.
- Serve salmon balls on a platter with creamy avocado sauce drizzled over or as a dip on the side.
