Ingredients
  

Steak Marinade
  • ¼ cup olive oil can substitute with avocado oil
  • ¼ cup soy sauce or tamari use tamari for gluten-free
  • 1 large lime juice can substitute with lemon juice
  • 3 cloves minced garlic use fresh for best results
  • 1 teaspoon cumin
  • 1 teaspoon chili powder adjust for spice preference
  • 1 pound flank or sirloin steak skirt steak is a great substitute
Bowl Base
  • 2 cups cooked rice or quinoa quinoa adds extra protein
Toppings
  • 1 cup corn salsa or canned corn if fresh is not available
  • 1 cup black beans rinse and drain canned beans
  • 1 medium avocado can substitute with guacamole
  • 1 cup cherry tomatoes or diced bell peppers for crunch

Method
 

Marinade Preparation
  1. In a medium bowl, whisk together olive oil, soy sauce or tamari, lime juice, minced garlic, cumin, and chili powder until well combined.
  2. Place the flank or sirloin steak into the marinade and cover. Let sit for at least 15 minutes or refrigerate for up to 4 hours.
Cooking and Assembly
  1. Heat a skillet over medium-high and add a splash of olive oil. Cook the marinated steak for 4-6 minutes on each side until medium-rare.
  2. Transfer the steak to a cutting board and let it rest for 10 minutes. Then slice thinly against the grain.
  3. Assemble your bowl with cooked rice or quinoa, sliced steak, corn salsa, black beans, avocado, and halved cherry tomatoes.
  4. Serve immediately, optionally with a wedge of lime.
