- In a large skillet, combine coconut milk, chicken broth, fish sauce, fresh lime juice, grated ginger, minced garlic, sliced chilies, brown sugar, and lime zest over medium heat until mixed. Bring to a gentle simmer.
- Carefully introduce the cod fillets into the simmering broth, reduce heat to low, cover, and poach for 8-10 minutes until the cod is opaque and flakes easily.
- In the last few minutes of poaching, add spinach leaves to the broth, stir gently, and let wilt for 2-3 minutes.
- Using a fish spatula, transfer the cod and spinach to serving plates, drizzle with broth, garnish with cilantro, and serve with lime wedges.
